5 times more people need to eat Gluten Free than this century than last

A study by the Mayo Clinic, determined that Celiac Disease, once thought to be rare, is far more common than it was just a few decades ago. New research shows 5 times as many people have the chronic digestive system disorder today than during the 1950’s.

In people with Celiac Disease, consuming gluten – proteins contained in wheat, barley and rye – sets off an immune system reaction that causes an allergic reaction to the lining of the stomach. It can cause many different types of discomfort, cramping, anemia and osteoporosis. Overtime, this can even put people into a state of severe malnutrition from the inability to digest properly.

The treatment – to avoid eating gluten – is both simple but complicated. Following a GF Diet can require a substantial change is one’s eating habits with ordinary sandwiches, bread, PIZZA, pasta and cookies off-limits.
